Plantain....a staple for Yamfoot

I could eat plantain morning, noon and night. I wish it didn't have any calories in it.

The perfect breakfast for me is ackee & saltfish, boiled white soft yam (my mother calls it 'yampie') and fried plantain at just the right stage of ripeness. I don't like it when it is firm. Must be soft and 'sucky-sucky'. Another favourite way to eat it is in a sandwich with cheese and tomato. Yum. My godmother/aunt loves it too so whenever I stay with her in Mandeville, plantain is a staple.

The cooks at work know about my love affair with the plantain so like yesterday when it was featured on the lunch buffet, they called me and said 'Yamfoot, ripe plantain today". Fill up the plate!

What else must I have in my house?

Limes
Honey
Oats
Peanut Butter
Soy milk
Water
An assortment of fruits
Raisins
Sardines
Bread
Cinnamon
Nutmeg
High fibre cereal
Some form of nuts, usually cashew
Lettuce and tomato, as a minimum for vegetables
Veggie mince

And this is basically what my cupboard and fridge has in it usually.

What food MUST you have in your cupboard/fridge?

Hey Mich, I love plantain also, try boiling it instead, as you know we Trinis eat it with sweet potato and greens. Try it, more healthy than fry plantain.

Disagree with you on one thing - I like my plantain when it is nice and firm, not when it is soft and soggy!!!

Plantain is a breakfast staple in our house. Although, I tried cutting out de whole lotta frying cause ah de health risk... Try plantains de way de spanish do it, fry, pound flat, fry again and sprinkle wid cheese..good..

I must have coffee, assorted gorumet teas, some kinda bread..ah too luvs me some bread... peanutbutter goes good with banana for a quick breakfast or snack., fruits and veggies....

Love plantain too but stopped frying it ages ago i just sprinkle cinamon on it and bake it delish...must haves....

an asortment of cheeses in my fridge these days into provalone any smoky cheese
peanut butter
guava jelly
prunes( easy snack to kill cravings and good for you too)
tuna (in water)
black beans,red beans,lentils,black eyed peas,pigeon peas, split peas i love love these
limes/lemons they freeze good
frozen veggies( easy to just add to some pasta for a salad)
frozen strawberies( put condensed milk for a snack love it)
popcorn (real not microwave)

Plantain...ok. I have it at other peoples house, have never bought it.
My groceries...
Lettuce and tomato
Onion and garlic
Sardine and Tuna
Calaloo
Oranges, lots, lots of them. My favourite is actually ortanique but that is very seasonal.
Oh yes, chicken.
Very basic but this is when you are on both a food and a money diet.

Favourite way for me is fried green plantain. Fried partially then pressed out and fried again.

Prefer the ripe one baked with a likkle brown sugar or honey and lime juice sprinkled on it. Like it firm, not soffy soffy.....

Am a big lover of plantains myself.Most time I just boil them though.

can't take the ripe plantains too much--they burn my mouth. They don't burn yours?

staples:
pasta, soy milk, rolls, pickles, popcorn
mustard, Italian bread, deli turkey (I will eat turkey every day if nobody stops me)
Also I have a secret love affair with callaloo but it's hard to get fresh in NY

had to comment on this cos i am a plantain lover myself.....esp. when its very ripe....i tend to eat it boiled more than fried nowadays and 'the salad bar' in new kingston serves it baked after coating with pineapple juice.....yum!!

Mi food list: both ripe & green bananas/plantains, various citrus, sun-dried tomatoes, olives, olive oil, organic potatoes, callaloo, romaine, avocado, ackee, saltfish, variety of whole-grain, coconut water, etc.
